and Farming
Stoney Clay on Limestone on parcels with a southwesterly exposure.
The farming philosophy is based upon the use of natural products,
no herbicides or pesticides and prudent limited intervention.
Grape Varieties
Syrah and Grenache Noir (80/20). The average age of the vines was
15 years at harvest.
Harvest
Hand harvested, sorted on table de tri and destemmed.
Vinification
A long maceration in stainless steel temperature controlled vats with
a fermentation at 26° C. Aged in a mixture of new, second and
third wine french oak for 15 months.
Tasting
notes
The colour is an intense and deep red. The powerful aroma is rich
in fruit particularly blackcurrant and small cherries; then come the
notes of toast spice and pepper with a hint of leather finishing this
multitude of aromas. The impact of the vanilla is straightforward
and spread out in the mouth in opulent waves.

Serving Notes
It is best served between 15-17° C and is a good accompaniment
with grilled meats and BBQs. |
